Easy, Healthy, Cheap, Kid-Friendly Pancakes

This is one of our favorite breakfasts to make!

Servings: 2-3

3 Eggs
½ Cup Oats (Rolled or Quick – We use rolled.)
½ Cup Cottage Cheese (We use full fat but any kind works!)
Optional: blueberries, bananas, chocolate chips, anything else you like in pancakes

Directions: Put all the ingredients in a blender and puree until everything is as mixed and combined as it can be. You can add any optional items on top of the batter in the skillet instead as well. Cook in a skillet how you would any other pancakes. Top with peanut butter, pure maple syrup, jelly or anything else you like on pancakes. They also reheat well if you don’t eat all of them right away.

Tip: We use a blender that requires you to flip the bottle upside down to blend after you put the ingredients in. If you have that as well, put the eggs in first, then the oats and finish with the cottage cheese. The eggs will push everything to the bottom when you flip it. And you can use the ½ cup measuring cup twice when you put in the dry ingredient before the wet. I’ve only learned by not doing it that way to start.

For 4-6 Servings: Double it!

It really is that simple, healthy, cheap and tasty. Enjoy it as much as your kids will!
